Not sure if it’s the same type, but I used to get such mushrooms – „chicken of the woods as they are called here – when worked as a chef in Vermont. They were great! )

We think it is the same mushroom „chicken of the woods“, they are really great and very famous by vegetarian.

I loved their texture and flavor, and indeed used them mostly as a vegetarian option on the menu. A shame it’s impossible to get them at the store…
